A simple yet impressive breakfast or brunch bake featuring mini croissants soaked in a creamy egg custard with ham and melted cheese. Perfect for quick, hearty mornings or casual gatherings.

  • 12 mini croissants (store-bought or homemade)
  • 8 ounces diced cooked ham (smoked preferred)
  • 1½ cups shredded cheese (sharp cheddar, gruyere, or Swiss)
  • 6 large eggs, room temperature
  • 1½ cups whole milk or half-and-half (can substitute unsweetened almond milk)
  • 1 teaspoon Dijon mustard
  • Salt to taste (about ½ teaspoon)
  • Freshly cracked black pepper to taste
  • 1 tablespoon chopped fresh herbs (chives or parsley, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cut each mini croissant in half horizontally to create top and bottom halves. Place the bottom halves evenly in a greased 9×13-inch baking dish.
  2. Distribute diced ham evenly over the croissant bottoms. Sprinkle shredded cheese on top.
  3. In a large bowl, whisk together eggs, milk or cream, Dijon mustard, salt, and pepper until smooth.
  4. Slowly pour the egg mixture evenly over the croissants, ham, and cheese. Press down lightly with a spatula to help croissants absorb the custard.
  5. Place the croissant tops over the custard-soaked bottoms. Optionally sprinkle extra cheese on top.
  6. Bake for 35-40 minutes until custard is set and top is golden brown and crispy. A knife inserted in the center should come out clean.
  7. Let rest for 10 minutes before serving. Garnish with chopped fresh herbs if desired.

Notes

Use room temperature eggs and milk for best custard texture. Freshly shredded cheese melts better than pre-shredded. Let the bake rest before slicing to set properly. Tent with foil if edges brown too quickly. Can be assembled the night before and refrigerated overnight; add 5-10 minutes to baking time if chilled. For individual servings, bake in muffin tins for 25-30 minutes.
