These easy mini Caprese skewers combine fresh mozzarella, cherry tomatoes, and basil with a homemade balsamic glaze for a quick, delicious appetizer perfect for any gathering.

  • 20 cherry tomatoes, washed and dried
  • 20 small fresh mozzarella balls (bocconcini), drained
  • 20 fresh basil leaves, washed and patted dry
  • ½ cup (120 ml) balsamic vinegar
  • 2 tablespoons granulated sugar (optional)
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt and freshly ground black pepper, to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Prepare the balsamic glaze: Pour ½ cup (120 ml) of balsamic vinegar into a small saucepan. Add 2 tablespoons of granulated sugar if you prefer a sweeter glaze. Bring to a gentle boil over medium heat, then reduce to low and simmer. Stir occasionally and let it reduce until thickened and syrupy, about 10-12 minutes. Be careful not to let it burn—it should coat the back of a spoon. Remove from heat and let it cool completely.
  2. Prep the ingredients: While the glaze is simmering, rinse and dry the cherry tomatoes and basil leaves. Drain the mozzarella balls well to avoid excess moisture.
  3. Assemble the skewers: Take one skewer or toothpick and thread a cherry tomato first, followed by a fresh basil leaf (folded if large), then a mozzarella ball. Repeat until all ingredients are used. Optionally, season each mozzarella ball with a pinch of salt and freshly ground black pepper before threading.
  4. Arrange and serve: Lay the skewers on a serving platter. Drizzle the cooled balsamic glaze evenly over the top. Optionally, add a light drizzle of extra virgin olive oil for richness. Serve immediately or cover loosely and refrigerate for up to 2 hours before serving.

Notes

If short on time, use store-bought balsamic glaze. Assemble skewers just before serving to keep basil fresh. Drain mozzarella well to avoid sogginess. Reduce balsamic vinegar slowly to prevent burning. Leftover glaze can be refrigerated up to two weeks.
