  • 1/4 cup whole milk or half-and-half
  • 3 cups frozen shredded hash browns
  • 1 pound cooked breakfast sausage or bacon
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers (any color)
  • 1/2 cup diced yellow onion
  • Salt, black pepper, garlic powder to taste
  • 1012 large flour tortillas (burrito size, 10-inch)
  • 2 tablespoons butter or oil

Instructions

  1. Cook your meat first. If using sausage or bacon, cook in a medium skillet over medium heat until browned and crispy. Drain on paper towels and crumble or chop into small pieces. Set aside. (About 8-10 minutes)
  2. Sauté the veggies. In your large non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced onions and bell peppers. Cook for 3-4 minutes until softened and fragrant. Season with a pinch of salt and pepper. Transfer to a bowl and set aside.
  3. Crisp up the hash browns. In the same skillet, add another tablespoon of butter. Spread the frozen hash browns in an even layer. Let them cook undisturbed for 4-5 minutes — this is how you get that golden crust. Flip and cook another 3-4 minutes. Season with salt, pepper, and a pinch of garlic powder. Remove from heat and let cool slightly.
  4. Scramble the eggs. In a mixing bowl, whisk the eggs with the milk until completely uniform — no streaks of white left. Pour into the skillet over medium-low heat. Use your spatula to gently push the eggs from the edges toward the center as they set. Keep them moving. When they’re about 80% cooked (still slightly glossy), remove from heat. They’ll finish cooking from residual heat. Season with salt and pepper.
  5. Combine the fillings. In a large bowl, gently mix together the scrambled eggs, cooked hash browns, sausage or bacon, sautéed veggies, and 1½ cups of the shredded cheese. Reserve the remaining ½ cup for topping later. Taste and adjust seasoning if needed.
  6. Assemble the burritos. Lay a tortilla on a clean surface. Spoon about ¾ cup of the filling mixture into the center, leaving a 2-inch border around the edges. Sprinkle a little of the reserved cheese on top. Fold the sides in, then fold the bottom flap over the filling. Roll tightly away from you, tucking as you go. The key is firm but gentle pressure — you want a snug roll, not a burst tortilla.
  7. Wrap for freezing. Place each burrito seam-side down on a piece of parchment paper or wax paper. Roll it up like a candy wrapper, twisting the ends to secure. Then wrap in a paper towel (this absorbs moisture during freezing and reheating). Place all wrapped burritos on a baking sheet and freeze for 1-2 hours until solid.
  8. Transfer to freezer bags. Once frozen, transfer the burritos to freezer-safe zip-top bags. Squeeze out as much air as possible before sealing. Label with the date — they’ll keep for up to 3 months.

Notes

Don’t overcook the eggs; they should still look slightly wet when removed from heat. Cool all fillings to room temperature before assembling to prevent sogginess. Toast tortillas briefly before assembling for better pliability. Cheese acts as a moisture barrier. For best results, reheat unwrapped in microwave for 2-3 minutes, flipping halfway, or microwave 1 minute then finish in a dry skillet for crispy exterior.
