  • 2 tbsp fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • 6 large flour tortillas (10-inch)
  • Salsa or hot sauce (for serving or adding inside)
  • Sour cream or Greek yogurt (optional, for topping)

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced onions and bell peppers, sauté for about 4 minutes until softened and fragrant.
  2. Add cooked sausage or drained and rinsed black beans. Cook for an additional 3 minutes, stirring occasionally. Season with salt, pepper, and optional cumin or smoked paprika.
  3. In a bowl, whisk 6 large eggs with a dash of salt and pepper. Pour into the skillet with veggies and protein. Stir gently with a spatula until eggs are just set but still moist, about 3-4 minutes. Remove from heat.
  4. Lay out the tortillas on a flat surface. Evenly divide the egg mixture among the tortillas, placing it slightly off-center. Sprinkle shredded cheddar cheese over the filling, then add chopped cilantro if using.
  5. Fold the sides over the filling, then roll tightly from the bottom up to create a compact wrap. Use a little salsa inside if desired.
  6. Individually wrap each burrito in foil or parchment paper. Let them cool completely before placing in the fridge or freezer.
  7. To reheat, unwrap and microwave for 1-2 minutes if refrigerated or 3-4 minutes if frozen, flipping halfway. For a crispy shell, sear the reheated burrito in a hot skillet for 1 minute per side.
