  • 1 lb (450 g) ground beef (80/20 blend)
  • 1 tbsp (14 g) unsalted butter
  • 1 medium yellow onion, finely chopped
  • 1 small green bell pepper, diced
  • 2 garlic cloves, minced
  • 3/4 cup (6 fl oz / 180 ml) ketchup
  • 2 tbsp (30 g) tomato paste
  • 1 tbsp (15 ml) Worcestershire sauce
  • 1 tbsp (12 g) brown sugar
  • 1 tsp (5 ml) Dijon mustard
  • 1 tsp (2 g) chili powder
  • Salt and black pepper, to taste
  • 4 large brioche buns

Instructions

  1. Finely chop 1 medium yellow onion and dice 1 small green bell pepper. Mince 2 cloves of garlic. This should take about 5 minutes.
  2. Heat 1 tablespoon of unsalted butter in a large skillet over medium heat. Add 1 lb (450 g) ground beef and cook, breaking it apart with your spoon, until browned and no longer pink — about 6-8 minutes. Drain excess fat if needed.
  3. Add the chopped onion, bell pepper, and minced garlic to the beef. Cook for 4-5 minutes until softened and fragrant.
  4. Stir in 3/4 cup (180 ml) ketchup, 2 tablespoons (30 g) tomato paste, 1 tablespoon (15 ml) Worcestershire sauce, 1 tablespoon (12 g) brown sugar, 1 teaspoon (5 ml) Dijon mustard, and 1 teaspoon (2 g) chili powder. Mix well to combine.
  5. Reduce heat to low and let everything simmer gently for 10-12 minutes, stirring occasionally to prevent sticking. The sauce should thicken but remain saucy enough to soak into the buns. Add a splash of water or broth if too thick.
  6. Season with salt and freshly ground black pepper to taste. Adjust sweetness or tang by adding more brown sugar or Worcestershire sauce if desired.
  7. While the filling simmers, slice brioche buns and toast them lightly in a dry pan or under the broiler for 1-2 minutes until golden and warm.
  8. Spoon a generous portion of the sloppy joe filling onto the bottom half of each toasted bun. Top with the other half and serve immediately.

Notes

Toast the brioche buns to prevent sogginess and add texture contrast. Adjust sauce thickness by simmering longer or adding water/broth. Use 80/20 ground beef for best flavor and juiciness. Store filling and buns separately for leftovers. Can substitute ground turkey or chicken for a lighter version, or use lentils/mushrooms for vegetarian option.
