  • 1/2 cup whole milk (or dairy-free alternative like oat milk)
  • 1 cup heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1 vanilla bean pod, split and scraped

Instructions

  1. Preheat oven to 350°F (175°C). In a small saucepan, gently warm honey and melted butter over low heat until combined and fragrant (about 2 minutes). Stir in lemon juice. Pour mixture evenly into the bottom of a greased 9-inch cake pan.
  2. Arrange peach slices neatly over the honey-butter mixture in the pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat softened butter and granulated sugar with an electric mixer or whisk until light and fluffy, about 3-4 minutes.
  5. Beat in eggs one at a time, then mix in vanilla extract.
  6. Alternately add flour mixture and milk to the butter mixture, beginning and ending with flour. Mix gently and fold with a spatula to keep batter light.
