A quick and easy sheet pan dinner featuring Italian sausage and caramelized sweet potatoes coated in a sticky honey garlic glaze. Perfect for busy weeknights with minimal cleanup.

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut two medium sweet potatoes into 1-inch cubes, keeping chunks roughly the same size for even cooking.
  3. In a small bowl, whisk together honey, minced garlic, apple cider vinegar, smoked paprika, salt, and pepper to make the honey garlic sauce.
  4. In a large mixing bowl, toss the sweet potatoes with olive oil, salt, and pepper until evenly coated.
  5. Spread the sweet potatoes in a single layer on a large rimmed baking sheet.
  6. Place the Italian sausage links on the pan alongside the sweet potatoes.
  7. Brush the sausages and sweet potatoes generously with the honey garlic sauce, allowing some to pool on the pan.
  8. Roast in the oven for 25-30 minutes, flipping the sausages and gently tossing the sweet potatoes halfway through cooking (around 15 minutes) to promote even browning.
  9. Check that sausages are golden brown and cooked through (internal temperature 160°F / 71°C) and sweet potatoes are tender with caramelized edges.
  10. Optionally, sprinkle chopped fresh parsley over the dish before serving.

Notes

Use high-quality raw honey and fresh garlic for best flavor. Avoid overcrowding the pan to ensure caramelization. Flip sausages and toss sweet potatoes halfway through roasting to prevent burning and promote even cooking. For extra crispy sweet potatoes, space them out more and avoid vigorous stirring. If using frozen sweet potatoes, pat dry and reduce roasting time slightly. Sausage fat content affects juiciness and flavor. Brush honey garlic glaze twice: before roasting and about 10 minutes before finishing for a stickier coating.
