Easy Honey Fig Jam with Vanilla

A simple, no-pectin-needed honey fig jam infused with vanilla, perfect for beginners. This jam offers a luxurious texture with subtle sweetness and a delicate crunch from fig seeds.

Ingredients

  • 1.5 pounds (700g) fresh figs, ripe but firm
  • 3/4 cup (250g) honey (preferably local wildflower honey)
  • 1 whole vanilla bean or 1 teaspoon pure vanilla extract
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 1/4 cup (60ml) water

Instructions

  1. Rinse the figs gently and pat dry. Remove the stems and chop the figs into small pieces, about 1/4 inch (6mm) chunks. (15 minutes)
  2. Split the vanilla bean lengthwise and scrape out the tiny seeds. Set seeds and pod aside. If using extract, hold off until later. (2 minutes)
  3. Add chopped figs, honey, lemon juice, water, vanilla seeds, and the scraped pod to a heavy-bottomed saucepan. Stir gently to combine. (3 minutes)
  4. Place the pot over medium heat and bring to a gentle boil. Reduce heat to low and let it simmer uncovered, stirring every few minutes to prevent sticking. Simmer for 40-50 minutes until figs soften and mixture thickens. (40-50 minutes)
  5. Test the jam’s consistency by placing a small dollop on a chilled plate and tilting it. If it wrinkles and holds shape, it’s done. Remove the vanilla pod. (2 minutes)
  6. If using vanilla extract, stir it in now for a fresh burst of aroma. (1 minute)
  7. Carefully spoon the hot jam into sterilized jars, leaving about 1/4 inch (6mm) headspace. Wipe rims clean and seal tightly. (5 minutes)
  8. Let the jars cool to room temperature before refrigerating. The jam will thicken further as it cools. (Cool for 1 hour)

Notes

Stir gently but consistently during simmering to avoid burning. Use fresh lemon juice to activate natural pectin. Test jam consistency on a chilled plate. Store jam in sterilized jars in the refrigerator for up to 3 weeks or freeze for up to 3 months. For vegan version, substitute honey with maple syrup or agave nectar.
