  • 1 can (15 oz) black beans, drained and rinsed (or pinto beans)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, sliced or cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • 1/4 cup sour cream or Greek yogurt
  • Fresh jalapeño slices or hot sauce (optional)

Instructions

  1. In a large bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Toss the chicken in the marinade, cover, and let rest at room temperature for 15 minutes or refrigerate up to 2 hours.
  2. Rinse rice under cold water until clear. In a medium saucepan, add rice, water (2 cups water per 1 cup rice), and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes (longer for brown rice). Fluff with a fork and stir in lime juice, cilantro, and garlic if using.
  3. Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
  4. Prepare toppings: drain and rinse beans, warm corn if frozen, slice avocado, halve cherry tomatoes, and get cheese and sour cream ready.
  5. Assemble bowls by dividing rice into containers, topping with chicken, beans, corn, avocado, tomatoes, cheese, and sour cream. Add jalapeños or hot sauce if desired.
  6. Cover and refrigerate. Consume within 4-5 days.
