Easy Frozen Yogurt Bark Bites for Perfect After-School Snacks

These easy frozen yogurt bark bites are creamy, crunchy, and just sweet enough to feel like a treat without the sugar crash. They take about five minutes of actual work, and the freezer does the rest, making them the perfect after-school snack.

  • 2 cups (480g) plain Greek yogurt
  • 3 tablespoons (60g) honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup (75g) mixed berries (fresh or frozen)
  • ¼ cup (30g) chopped nuts (pistachios, almonds, or walnuts)
  • 2 tablespoons (15g) shredded coconut (unsweetened or sweetened)
  • 2 tablespoons (20g) mini chocolate chips
  • Optional: 1 tablespoon chia seeds or hemp hearts

Instructions

  1. Line your baking sheet with parchment paper, leaving a little overhang on two sides. Press the parchment into the corners so it lies flat.
  2. In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, and salt until smooth and completely combined. Taste and adjust sweetness if needed.
  3. Pour the yogurt mixture onto the center of the prepared baking sheet. Use a rubber spatula to spread it into an even rectangle, about ¼ inch thick.
  4. Sprinkle the toppings evenly over the yogurt. Start with the berries, pressing them gently into the yogurt. Then add the nuts, coconut, and chocolate chips. If using chia seeds or hemp hearts, sprinkle them last.
  5. Place the baking sheet in the freezer on a flat surface. Freeze for at least 3 hours, or until the yogurt is completely solid. Overnight is ideal.
  6. Once frozen solid, remove the baking sheet from the freezer. Lift the parchment paper to release the bark. Place it on a cutting board and let it sit at room temperature for 2-3 minutes.
  7. Break the bark into irregular pieces using your hands or a sharp knife.
  8. Transfer the pieces to a freezer-safe container or zip-top bag, layering them with parchment paper between layers to prevent sticking. Seal tightly and return to the freezer immediately.

Notes

For best results, use full-fat Greek yogurt for creaminess. Let the bark sit at room temperature for 2-3 minutes before breaking to prevent shattering. Store in the freezer for up to 2 weeks. The flavors improve after a day or two.
