  • 4 cups granulated sugar (800 grams)
  • 1 box powdered fruit pectin (about 1.75 ounces or 49 grams)

Instructions

  1. Prepare the peaches by peeling them. Blanch peaches in boiling water for 30 seconds then plunge into ice water to make peeling easier. Chop finely to about 4 cups.
  2. In a large bowl, combine the chopped peaches with the entire box of powdered fruit pectin. Stir vigorously for about 3 minutes to activate the pectin and prevent clumps.
  3. Stir in 4 cups of granulated sugar until fully dissolved. Let the mixture sit for 10 minutes to allow the sugar to draw out juice from the fruit.
  4. Optionally, use a potato masher or fork to gently mash the peaches to your preferred consistency (chunky or smooth).
  5. Quickly spoon the jam into clean, airtight jars or containers, leaving about ½ inch (1.3 cm) of space at the top.
  6. Seal the containers tightly and place them in the freezer. The jam will start setting as it chills.
  7. The jam is spreadable and ready after about 24 hours in the freezer. Thaw a jar in the fridge as needed before serving.
