  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

  • 23 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. Peel the peaches and slice into 1/2-inch thick wedges. Toss the sliced peaches with lemon juice, 2 tablespoons granulated sugar, vanilla extract, cinnamon, and a pinch of salt. Stir gently to coat evenly.
  3. Spread the peach mixture evenly in the prepared baking dish, keeping the layer flat but not packed tightly.
  4. In a separate bowl, combine oats, brown sugar, all-purpose flour, and remaining 1 tablespoon granulated sugar. Pour melted butter over the dry ingredients and mix until a crumbly mixture forms.
  5. Sprinkle the oat crumble evenly over the peaches without pressing down.
  6. Bake for 35-40 minutes until the topping is golden brown and peach juices are bubbling. Tent with foil if topping browns too quickly.
  7. Let the cobbler cool for 10-15 minutes before serving to allow juices to thicken.
  8. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use rolled oats, not instant, for better texture. If topping browns too fast, tent with foil. Peeling peaches improves texture but is optional. Frozen peaches can be used if thawed and drained. For gluten-free, substitute flour and oats accordingly. Adding chopped nuts to topping adds crunch.
