These Easy Fresh Caprese Skewers with Balsamic Glaze are a quick, simple, and irresistibly tactile appetizer perfect for parties or a quick snack, combining creamy mozzarella, juicy cherry tomatoes, fresh basil, and a sticky balsamic glaze.

  • 1 pint cherry tomatoes (about 300 grams), washed and dried
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine size), drained
  • 20 large fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil (optional, for brushing)
  • ¼ cup balsamic glaze (about 60 ml), store-bought or homemade
  • Salt to taste (preferably sea salt flakes)
  • Freshly ground black pepper to taste
  • Wooden or bamboo skewers, 6-inch length

Instructions

  1. Prepare the balsamic glaze: If using store-bought, skip this step. To make your own, pour ½ cup (120 ml) balsamic vinegar into a small saucepan with 1 tablespoon honey or sugar. Heat on medium-low, stirring occasionally, until reduced by half and syrupy, about 10-12 minutes. Let cool to thicken.
  2. Drain mozzarella balls well using a sieve or paper towels to remove excess liquid.
  3. Wash and dry cherry tomatoes and basil leaves thoroughly to prevent slippery skewers and help glaze stick.
  4. Assemble skewers by threading a mozzarella ball first, then a folded basil leaf, and finish with a cherry tomato. Repeat until all ingredients are used, making about 12-15 skewers.
  5. Arrange skewers on a serving platter. Lightly brush with extra virgin olive oil and sprinkle with salt and freshly ground black pepper.
  6. Drizzle balsamic glaze generously over the skewers using a spoon or squeeze bottle.
  7. Serve immediately. Skewers can be made up to 1 hour ahead, kept covered in the refrigerator, and brought to room temperature before serving.

Notes

Assemble skewers without balsamic glaze if making ahead; add glaze just before serving to prevent sogginess. Thread mozzarella first to help keep tomato in place. Use ripe, firm tomatoes and dry ingredients well for best results. Balsamic glaze should be sticky but pourable; adjust consistency by warming or reducing further.
