A quick and easy dessert featuring a soft sugar cookie crust topped with a silky cream cheese spread and fresh, colorful fruit. Perfect for any occasion and ready in under 30 minutes.

Ingredients

Scale
  • 1 package (about 15) sugar cookies (store-bought or homemade)
  • Optional: 1 tablespoon unsalted butter, melted (for brushing, adds richness)
  • 8 oz cream cheese, softened (full fat for best flavor)
  • ½ cup sour cream or Greek yogurt
  • ⅓ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup kiwi, peeled and sliced
  • 1 cup blueberries
  • 1 cup mandarin orange segments or thinly sliced peaches
  • Optional: fresh mint leaves for garnish

Instructions

  1. Arrange about 15 sugar cookies in a tight circle on a serving platter, slightly overlapping to form a round pizza base. If cookies are not soft, brush lightly with melted butter and warm in a 300°F oven for 3-5 minutes, then let cool.
  2. In a mixing bowl, beat 8 oz softened cream cheese with ½ cup sour cream or Greek yogurt until smooth and creamy (about 2-3 minutes). Add ⅓ cup granulated sugar and 1 teaspoon vanilla extract, then beat until well combined and fluffy. Adjust sweetness to taste.
  3. Spread the cream cheese mixture evenly over the arranged sugar cookies using a spatula, covering all visible cookie surfaces with a smooth layer.
  4. Wash and slice fruit thinly and uniformly (about ¼ inch thick for strawberries and kiwi). Drain excess juice from mandarin oranges or peaches to prevent sogginess.
  5. Arrange the fruit artistically on top of the creamy layer, covering the entire surface in concentric circles, a mosaic, or any preferred pattern.
  6. Refrigerate the fruit pizza for at least 30 minutes to allow the topping to firm up and flavors to meld. Serve chilled or at room temperature.

Notes

Keep cream cheese at room temperature before starting to avoid lumps. If topping is too thick, whisk in a tablespoon of milk or cream. Use firm, fresh fruit to avoid soggy cookies. Chill assembled pizza for at least 30 minutes before serving. Store leftovers covered in the refrigerator for up to 2 days; avoid freezing.
