Instructions

  1. Prep the Chicken (5 minutes): If using a rotisserie chicken, remove skin and bones, then dice meat into small pieces. Warm in microwave for 30 seconds if desired.
  2. Make the Filling (5 minutes): In a large mixing bowl, combine diced chicken, Caesar dressing, Parmesan cheese, lemon juice, and black pepper. Stir until chicken is evenly coated.
  3. Add the Crunch (2 minutes): Gently fold in chopped romaine lettuce and croutons. Do not overmix.
  4. Warm the Tortillas (30 seconds): Microwave tortillas wrapped in a damp paper towel for 15-20 seconds until pliable.
