A quick and comforting single-serve lasagna made entirely in a microwave mug in just 5 minutes. Perfect for busy nights when you crave lasagna without the effort.

  • 45 lasagna noodles, broken into 1-inch pieces
  • ½ cup (120 ml) marinara sauce
  • 2 tablespoons (30 ml) water
  • ¼ cup (60 g) ricotta cheese
  • ¼ cup (28 g) shredded mozzarella cheese
  • 1 tablespoon (5 g) grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: red pepper flakes, fresh spinach, mini pepperonis

Instructions

  1. Break 4-5 lasagna sheets into small, bite-sized pieces (about 1-inch squares).
  2. Place the broken noodles into a microwave-safe mug (at least 12 oz capacity).
  3. Add ½ cup marinara sauce and 2 tablespoons water. Stir gently to coat the noodles.
  4. Microwave on high for 3 minutes (add 30 seconds if microwave is under 1000 watts). Noodles should be tender but still have a slight bite.
  5. Carefully remove the mug. Spoon ¼ cup ricotta on top, then sprinkle ¼ cup shredded mozzarella and 1 tablespoon grated Parmesan over everything.
  6. Sprinkle ½ teaspoon garlic powder, ½ teaspoon dried oregano, and a pinch of salt and pepper over the cheese.
  7. Microwave for another 1 minute 30 seconds to 2 minutes, until cheese is melted, bubbly, and slightly browned around edges.
  8. Let the mug sit for 1-2 minutes before eating to allow sauce to thicken and prevent burns.

Notes

Do not skip the water—it creates steam to cook the noodles evenly. Use shredded mozzarella for best melting; fresh slices may not melt well. Let the mug rest after cooking for best texture. For lower wattage microwaves, add 30 seconds to each cooking stage.
