Deviled Eggs with Bacon and Chives

  • 12 large eggs
  • 6 slices bacon, cooked until crisp and chopped
  • ½ cup (120 ml) mayonnaise
  • 1 tbsp (15 ml) Dijon mustard
  • 2 tbsp fresh chives, finely chopped
  • 1 tsp (5 ml) white vinegar
  • Salt and freshly ground black pepper, to taste
  • Smoked paprika, for garnish (optional)

Instructions

  1. Place 12 large eggs in a large pot and cover with cold water by about an inch. Bring to a rolling boil over medium-high heat, then cover the pot, turn off the heat, and let sit for 12 minutes.
  2. Drain hot water and immediately transfer eggs to an ice bath. Let chill for at least 10 minutes.
  3. Cook 6 slices of bacon in a skillet over medium heat until crisp (about 8 minutes), then drain on paper towels and chop into small pieces.
  4. Gently tap each egg on the counter and peel off the shell. Slice each egg in half lengthwise, carefully remove yolks, and place them in a mixing bowl.
  5. Mash the yolks with a fork or hand mixer until smooth. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until creamy and well combined.
  6. Stir in chopped bacon and 2 tablespoons of finely chopped fresh chives, reserving some chives for garnish.
  7. Using a piping bag or spoon, fill the hollowed egg whites evenly with the yolk mixture. Sprinkle with smoked paprika and remaining chives.
  8. Cover and refrigerate for at least 30 minutes before serving.

Notes

Peel eggs under running water to remove stubborn shell bits. If filling is too thick, add a splash of milk or more mayo. Avoid overmixing to prevent runny filling. Bacon can be cooked in the oven on a foil-lined baking sheet for convenience. For vegetarian options, substitute bacon with smoked mushrooms or coconut bacon and use vegan mayo.
