  • 1 cup (200g) brown sugar, packed

  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, gently toss together 6 cups (150g) of Crispix cereal and 1 ½ cups (180g) of roughly chopped pecans. Set aside.
  3. In a medium saucepan, melt ½ cup (115g) unsalted butter over medium heat. Once melted, stir in 1 cup (200g) brown sugar, ¼ cup (60ml) light corn syrup, 1 teaspoon vanilla extract, ½ teaspoon cinnamon, and ¼ teaspoon salt. Bring the mixture to a gentle boil, stirring constantly.
  4. Let the glaze boil for exactly 2 minutes without stirring.
  5. Remove the saucepan from heat and quickly stir in ¼ teaspoon baking soda. The mixture will bubble up and lighten in color.
  6. Pour the hot praline glaze over the cereal and pecans. Use a wooden spoon or silicone spatula to gently but thoroughly coat everything.
  7. Transfer the coated mix evenly onto your prepared baking sheet, spreading it out to a single layer.
  8. Bake in the preheated oven for 45 minutes, stirring every 15 minutes.
  9. Remove from the oven and allow the snack mix to cool completely on the baking sheet.
  10. Once cooled, break into clusters if needed and store in an airtight container at room temperature for up to two weeks.
