  • 3 cups wheat Chex cereal
  • 1 ½ cups (255 grams) white chocolate chips
  • 1 cup (120 grams) dried cranberries, preferably sweetened
  • 1 cup red and blue candy pieces (e.g., M&Ms)
  • ½ cup (113 grams) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, gently mix 3 cups each of rice, corn, and wheat Chex cereals. Add ½ teaspoon of salt and stir to distribute evenly.
  3. Melt ½ cup (113 grams) of unsalted butter in a microwave-safe bowl or on the stove until just melted. Pour the melted butter over the cereal mixture and toss gently to coat without breaking the cereal pieces.
  4. Spread the coated cereal evenly on the prepared baking sheet. Place in the oven for 15 minutes, stirring carefully every 5 minutes to ensure even baking.
  5. Remove from oven and let the cereal cool slightly while you melt the white chocolate.
  6. Melt 1 ½ cups (255 grams) of white chocolate chips gently in a double boiler or microwave-safe bowl. If microwaving, heat in 20-second intervals, stirring each time until smooth and creamy.
  7. Stir 1 teaspoon of vanilla extract into the melted white chocolate.
  8. Transfer the baked cereal back to the large mixing bowl. Drizzle the melted white chocolate over the cereal and fold gently with a spatula to coat pieces lightly and evenly.
  9. Immediately sprinkle 1 cup dried cranberries and 1 cup red and blue candies into the mix and fold gently to combine.
