Ingredients

  • 1 cup (200g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 6 tbsp (45g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 egg, room temperature
  • 1/2 cup (120ml) boiling water
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (250g) powdered sugar
  • 1 tbsp heavy cream
  • 1 tsp mint extract
  • Green food coloring (optional)
  • 12 oz (340g) semisweet chocolate chips or candy melts
  • Sprinkles or crushed peppermint candies (optional)
  • Cake pop sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pan.
  2. In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, vanilla extract, and the egg. Mix until combined.
  4. Slowly add boiling water while stirring. Pour the batter into the pan and bake for 30-35 minutes. Let it cool completely.
  5. Beat softened butter in a mixing bowl until creamy. Gradually add powdered sugar, then mix in heavy cream and mint extract. Add green food coloring if desired.
  6. Crumble the cooled cake into fine crumbs in a large bowl. Add frosting a little at a time, mixing until the texture is sticky enough to hold its shape.
  7. Use an ice cream scoop or spoon to form small balls. Place them on a baking sheet lined with parchment paper and chill in the fridge for at least an hour.
  8. Heat chocolate chips or candy melts in a microwave-safe bowl in 30-second intervals, stirring in between, until completely melted.
  9. Dip one end of a cake pop stick into melted chocolate, then insert it into a cake ball. Dip the cake pop into the chocolate, ensuring it’s evenly coated. Add sprinkles or crushed candies if desired.
  10. Place the finished cake pops on a styrofoam block or stand until the coating hardens. Chill in the fridge for 15-20 minutes.
