  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 4 large eggs, room temperature
  • 1 cup (120g) all-purpose flour
  • 3/4 cup (90g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee granules
  • 8 oz (225g) semi-sweet chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 1 tsp instant coffee granules (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth and creamy.
  3. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract and coffee granules until fully combined.
  4. Sift together flour, cocoa powder, and salt in a separate bowl. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs. Let the brownies cool completely.
  6. Heat heavy cream in a small saucepan or microwave until steaming but not boiling. Pour over chopped chocolate and coffee granules in a bowl. Let sit for 2-3 minutes, then whisk until smooth and glossy.
  7. Spread the ganache evenly over the cooled brownies using a spatula. Let it set at room temperature or chill in the fridge for about 30 minutes.
  8. Slice the brownies into squares with a sharp knife, wiping the knife clean between cuts. Serve and enjoy!
