  • 1 teaspoon lemon juice
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups heavy whipping cream, cold
  • Fresh strawberries, halved or sliced (for garnish)
  • Optional: white chocolate shavings or powdered sugar (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar until evenly coated. Press firmly into a 9-inch pie dish and bake for 8-10 minutes until golden. Let cool completely.
  2. Toss sliced strawberries with 2 tablespoons sugar and lemon juice. Let sit at room temperature for 15 minutes to macerate.
  3. Puree the macerated strawberries and juices in a food processor or blender until smooth but vibrant. Set aside.
  4. Beat softened cream cheese and powdered sugar with an electric mixer until smooth and creamy, about 2-3 minutes. Add vanilla extract and mix.
  5. Whip cold heavy cream to soft peaks in a chilled bowl.
  6. Gently fold pureed strawberries into the cream cheese mixture, then carefully fold in whipped cream in batches to keep the filling light and airy.
  7. Spoon the filling into the cooled crust and smooth the top. Refrigerate for at least 4 hours or overnight to set.
  8. Before serving, garnish with fresh strawberry halves and optional white chocolate shavings or powdered sugar.
