A rich, silky, and ultra moist chocolate mousse parfait that melts on your tongue with deep chocolate flavor. Easy to prepare in just 30 minutes, perfect for any occasion.

Ingredients

  • 6 oz (170 g) dark chocolate (70% cacao), good quality like Ghirardelli or Lindt
  • 1 ½ cups (360 ml) heavy cream, chilled
  • 3 large eggs, separated
  • ⅓ cup (65 g) granulated sugar
  • 1 tsp (5 ml) vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries, shaved chocolate, or crushed nuts

Instructions

  1. Chop 6 oz (170 g) of dark chocolate into small pieces. Place in a heatproof bowl over simmering water (double boiler) and stir gently until smooth. Remove from heat and let cool slightly (about 5 minutes).
  2. In a large chilled bowl, whip 1 ½ cups (360 ml) of heavy cream using an electric mixer on medium speed until soft peaks form (about 3-4 minutes). Be careful not to over-whip.
  3. In another bowl, whisk 3 large egg yolks with ⅓ cup (65 g) granulated sugar and 1 tsp (5 ml) vanilla extract until pale and slightly thickened (about 2-3 minutes).
  4. Slowly pour the melted chocolate into the egg yolk mixture, stirring continuously until fully incorporated. The chocolate should be warm, not hot.
  5. In a clean bowl, add a pinch of salt to 3 large egg whites. Whip on high speed until stiff peaks form (about 4-5 minutes).
  6. Gently fold the whipped cream into the chocolate mixture using a rubber spatula. Then carefully fold the whipped egg whites into the combined mixture in three additions, keeping as much air as possible.
  7. Spoon the mousse into serving glasses or parfait cups, layering if desired. Chill in the refrigerator for at least 1 hour to set.
  8. Top with fresh berries, shaved chocolate, or nuts just before serving.

Notes

Melt chocolate gently using a double boiler to avoid burning. Whip cream to soft peaks and egg whites to stiff peaks for best texture. Fold ingredients gently to keep mousse airy. Chill at least 1 hour for best set; 30 minutes if in a hurry but texture will differ. Use fresh eggs or pasteurized eggs for safety. For dairy-free version, substitute heavy cream with coconut cream and use dairy-free chocolate.
