Decadent Grilled Banana Foster S’mores Recipe with Easy Caramel Drizzle

A cozy and indulgent twist on classic s’mores featuring smoky grilled bananas, melty chocolate, and a rich homemade caramel drizzle with a hint of rum vanilla extract.

  • 2 ripe but firm bananas, sliced lengthwise
  • 8 whole graham crackers
  • 4 oz semi-sweet chocolate or chocolate chips
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup packed brown sugar
  • 1/4 cup heavy cream (or half-and-half)
  • 1 teaspoon rum vanilla extract
  • A pinch of salt
  • 4 large marshmallows (optional)

Instructions

  1. Peel and slice each banana lengthwise into two long halves.
  2. Preheat the grill or grill pan to medium-high heat.
  3. Place banana halves cut-side down on the grill and cook undisturbed for 2-3 minutes until golden and caramelized.
  4. Flip bananas and grill the skin side for another 1-2 minutes until soft but holding shape.
  5. While bananas grill, melt butter in a small saucepan over medium heat.
  6. Stir in brown sugar and a pinch of salt; let bubble gently for 2 minutes.
  7. Slowly whisk in heavy cream and vanilla extract; stir until smooth and slightly thickened. Remove from heat.
  8. Assemble s’mores by layering a grilled banana half, chocolate pieces, and marshmallow (if using) on a graham cracker.
  9. Top with another graham cracker.
  10. Optionally, place assembled s’mores on the grill wrapped in foil for 1-2 minutes to soften chocolate and puff marshmallow.
  11. Serve warm with generous caramel drizzle over the top.

Notes

Use medium-high heat to caramelize bananas without mushiness. Stir caramel gently to avoid burning and lumps. For dairy-free, substitute butter with coconut oil and heavy cream with coconut cream. Gluten-free graham crackers can be used for gluten-free version. Wrap s’mores in foil when grilling to prevent mess.
