  • 24 ounces (680g) cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • ¼ cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)
  • 2 tablespoons unsalted butter, melted (to brush on top)

Instructions

  1. Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, and 1 teaspoon cinnamon. Stir in melted butter until mixture resembles damp sand.
  2. Press crust mixture firmly and evenly into the bottom of a 9-inch springform pan, about ¼ inch thick. Bake for 10 minutes, then remove and let cool slightly.
  3. In a large bowl, beat softened cream cheese with an electric mixer on medium speed for about 3 minutes until smooth and fluffy. Gradually add ¾ cup sugar and mix until combined.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract and sour cream. Add flour and blend just until smooth, avoiding overmixing.
  5. Pour cheesecake filling over cooled crust and spread evenly. Bake at 325°F (163°C) for 50-60 minutes until edges are set but center jiggles slightly.
  6. While baking, mix ½ cup sugar with 2 teaspoons cinnamon for topping.
  7. Remove cheesecake from oven, immediately brush surface with melted butter, then sprinkle cinnamon sugar topping evenly over the top.
  8. Let cheesecake cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight to set.
  9. Run a thin knife around the edge before releasing the springform pan. Slice with a warm knife and serve.

Use room temperature cream cheese, eggs, and sour cream for smooth batter. Avoid overmixing to prevent cracks. Baking with a water bath or placing a pan of water in the oven helps keep cheesecake moist and crack-free.
