  • 1/2 cup (90g) white chocolate chips
  • 1 teaspoon vanilla extract
  • Optional: pinch of salt

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or lightly grease it and set aside.
  2. In a medium saucepan over low heat, melt 4 tablespoons (57g) unsalted butter.
  3. Add 10 oz (283g) marshmallows and stir constantly until fully melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 cup (250g) creamy peanut butter and 1 teaspoon vanilla extract until combined.
  5. Pour in 6 cups (150g) Rice Krispies cereal and stir gently but thoroughly to coat all crisps.
  6. Transfer mixture to prepared pan and press down firmly and evenly to about 1-inch thickness.
  7. Let cool at room temperature for 15-20 minutes.
  8. Melt 1 cup (175g) semi-sweet chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth.
  9. Pour melted chocolate over cooled treats and spread evenly with a spatula.
  10. Chill in the fridge for 20 minutes until chocolate firms.
  11. Cut treats into oblong football shapes about 4 inches long using a sharp knife.
  12. Melt 1/2 cup (90g) white chocolate chips and transfer to a piping bag or zip-top bag.
  13. Pipe thin parallel lines across the center of each football, then add small vertical lines to mimic football laces.
  14. Let white chocolate set completely before serving.

Notes

Use low heat to melt marshmallows and butter slowly to avoid burning. Press mixture firmly but not too hard to keep treats tender. Chill treats before cutting for cleaner edges. For nut-free version, substitute peanut butter with sunflower seed butter and use allergy-friendly chocolate. Vegan adaptations include vegan butter, marshmallows, and dairy-free chocolate chips.
