  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • 2 ripe bananas, mashed
  • 3 ripe bananas, sliced
  • ½ cup unsalted butter
  • ¾ cup brown sugar, packed
  • ¼ cup dark rum (optional)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar. Stir until evenly coated. Press firmly into bottom of 9-inch springform pan. Bake 8-10 minutes. Remove and cool.
  2. In a large bowl, beat softened cream cheese with electric mixer on medium speed until smooth, about 2-3 minutes. Gradually add granulated sugar while mixing. Add eggs one at a time, fully incorporating each before adding next. Mix in vanilla extract and sour cream until just combined. Gently fold in mashed bananas with rubber spatula, avoiding overmixing.
  3. Pour cheesecake batter over cooled crust, smoothing top. Place springform pan on baking sheet. Bake at 325°F (163°C) for 50-60 minutes, until edges are set but center jiggles slightly. Avoid opening oven door during first 40 minutes.
  4. Turn off oven and leave cheesecake inside with door slightly open for 1 hour. Remove and cool completely on wire rack. Refrigerate at least 4 hours or overnight.
  5. For topping, melt butter in large skillet over medium heat. Add brown sugar, cinnamon, and salt; stir until sugar dissolves and mixture bubbles gently. Add sliced bananas; cook 2-3 minutes until softened but not mushy. If using, add rum carefully and ignite to flambé (optional). Cook 1 more minute until alcohol burns off and sauce thickens. Remove from heat and stir in vanilla extract.
  6. Serve cheesecake chilled with warm bananas foster topping spooned over each slice.

Notes

Use room temperature cream cheese and eggs to avoid lumps. Cool cheesecake gradually with oven door ajar to prevent cracks. Moderate heat for topping prevents mushy bananas. Overmixing batter can cause cracks. Water bath optional but helpful for moisture.
