  • 4 large sweet potatoes (about 3 pounds), peeled and cubed
  • 2 large eggs, room temperature
  • 1/2 cup whole milk
  • 1/3 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1/4 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup water (for initial cooking)
  • For the Pecan Topping:
  • 3/4 cup chopped pecans
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Peel and cube the sweet potatoes. Place them in the Crockpot with 1/2 cup water.
  2. Cover and cook on HIGH for 2-3 hours or LOW for 4-5 hours, until fork-tender. Drain any excess liquid.
  3. Mash the sweet potatoes in the Crockpot until smooth or leave slightly chunky if preferred.
  4. In a separate bowl, whisk together eggs, milk, melted butter, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  5. Pour the egg mixture over the mashed sweet potatoes and stir until well combined.
  6. Smooth the sweet potato mixture evenly in the Crockpot.
  7. In a small bowl, mix together pecans, melted butter, brown sugar, cinnamon, and a pinch of salt for the topping.
  8. Sprinkle the pecan topping evenly over the sweet potato mixture.
  9. Cover and cook on HIGH for 1 hour or LOW for 2 hours, until the topping is golden and the edges caramelize. For extra crunch, crack the lid open for the last 15-20 minutes.
  10. Switch the Crockpot to ‘Keep Warm’ and serve directly from the slow cooker.

Notes

For a dairy-free version, use almond, oat, or coconut milk and vegan butter. For nut-free, omit pecans or use sunflower seeds. Add mini marshmallows on top during the last 30 minutes for a classic twist. To keep the topping crunchy, crack the lid open for the last 15-20 minutes. Line the slow cooker for easy cleanup.
