A playful twist on the classic Reuben sandwich, these crispy egg rolls are filled with corned beef, Swiss cheese, and sauerkraut, served with a tangy homemade Thousand Island sauce. Perfect as a quick appetizer or party snack with a satisfying crunch and bold flavor.

Ingredients

Scale
  • Thinly sliced corned beef (deli-style or leftover)
  • Shredded or thinly sliced Swiss cheese
  • Sauerkraut, drained and patted dry
  • Egg roll wrappers
  • Butter or vegetable/canola oil for frying
  • For the Thousand Island sauce:
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dill pickle relish
  • ½ teaspoon Worcestershire sauce
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika

Instructions

  1. Prepare the filling by finely chopping or shredding the corned beef. Mix with drained sauerkraut and shredded Swiss cheese until moist but not soggy.
  2. Make the Thousand Island sauce by whisking together mayonnaise, ketchup, dill pickle relish, Worcestershire sauce, lemon juice, garlic powder, and smoked paprika. Chill until ready to serve.
  3. Lay one egg roll wrapper on a clean surface with a corner facing you. Place about 2 tablespoons of filling near the bottom corner.
  4. Fold the bottom corner over the filling, then fold in the sides snugly, and roll tightly toward the top corner. Seal the edge with a little water.
  5. Heat about 2 inches of oil in a deep frying pan to 350°F (175°C). Test the oil by dropping a small piece of wrapper in; it should bubble and float immediately.
  6. Fry 3-4 egg rolls at a time without overcrowding for 3-4 minutes, turning occasionally until golden brown and crispy.
  7. Remove with tongs and drain on paper towels.
  8. Serve immediately with a generous bowl of the tangy Thousand Island sauce for dipping.

Notes

Oil temperature is key to avoid greasy or burnt egg rolls. Seal edges well with water or beaten egg to prevent bursting. Drain excess oil on paper towels to keep rolls crispy. Can be assembled ahead and refrigerated up to 2 hours before frying. Reheat leftovers in toaster oven or air fryer to maintain crispness. Baking is possible but less crispy.
