An easy and elegant appetizer featuring tender asparagus wrapped in crispy prosciutto, perfect for entertaining or a quick snack.

  • 1 pound (450 grams) fresh asparagus, medium-thick stalks
  • 810 thin slices (about 4 ounces or 115 grams) prosciutto
  • 1 tablespoon (15 ml) extra virgin olive oil
  • Fresh ground black pepper, to taste
  • 1 small lemon, zested and juiced (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Parmesan cheese, light sprinkle before serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Rinse 1 pound (450 grams) of asparagus under cold water, then trim off the tough ends (about 1 to 2 inches).
  3. Group about 3 to 4 asparagus stalks per bundle. Wrap each bundle tightly but gently with one slice of prosciutto, spiraling around with slight overlap.
  4. Arrange the bundles evenly on the prepared baking sheet. Drizzle 1 tablespoon olive oil over the bundles, then sprinkle with 1/4 teaspoon garlic powder and fresh ground black pepper.
  5. Bake for 12-15 minutes until prosciutto is crisp and golden and asparagus is tender but bright green. At about 8 minutes, use tongs to gently turn each bundle for even crisping.
  6. Remove from oven, zest lemon over the bundles and squeeze fresh lemon juice on top. Optionally, sprinkle grated Parmesan cheese.
  7. Serve warm or at room temperature.

Notes

Use medium-thick asparagus stalks for best texture. Turn bundles halfway through baking for even crisping. Optional lemon zest and juice brighten flavors. Can substitute turkey bacon for prosciutto for a milder flavor. Parmesan cheese is optional and can be replaced with plant-based alternatives for dairy-free.
