  • 1/3 cup cornstarch
  • Salt and black pepper, to taste

  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low-sodium if preferred)
  • 34 large garlic cloves, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili garlic sauce (optional)
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish
  • Lemon or lime wedges, for serving (optional)

Instructions

  1. Pat the salmon fillets dry with paper towels and cut into 1-inch cubes.
  2. In a medium bowl, toss the salmon cubes with salt and black pepper. Sprinkle cornstarch over the top and toss until evenly coated.
  3. In a small saucepan, combine honey, soy sauce, rice vinegar, minced garlic, and sriracha (if using). Whisk together and heat over medium-low for 2-3 minutes, stirring often, until fragrant and slightly thickened. Remove from heat.
  4. Heat oil in a large nonstick or cast iron skillet over medium-high heat until shimmering.
  5. Add salmon cubes in a single layer, leaving space between each piece. Cook undisturbed for 2-3 minutes until golden and crisp. Flip and cook another 2 minutes until just cooked through.
  6. Transfer cooked salmon bites to a paper towel-lined plate. Cook in batches if needed, adding more oil as necessary.
  7. Return all salmon bites to the skillet (wipe out excess oil first if needed). Pour the honey garlic sauce over the top and gently toss to coat for about 30 seconds.
  8. Serve immediately, garnished with sesame seeds, sliced green onions, and a squeeze of lemon or lime if desired.

Notes

For extra crispiness, make sure to pat the salmon dry and avoid overcrowding the pan. To make gluten-free, use tamari or coconut aminos and ensure your cornstarch is gluten-free. You can bake the salmon bites at 425°F for 12-15 minutes for a lighter version. Leftovers are best reheated in a skillet to revive crispiness.
