  • 4 salmon fillets (56 oz each, skin-on if possible)
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup all-purpose flour (or rice flour/cornstarch for gluten-free)
  • 23 tablespoons neutral oil for frying (avocado, canola, or grapeseed)
  • 3 tablespoons honey
  • 34 cloves fresh garlic, finely minced
  • 2 tablespoons soy sauce (low-sodium preferred, or tamari/coconut aminos for gluten-free)
  • 1 tablespoon rice vinegar (or apple cider vinegar/lemon juice)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Toasted sesame seeds (for serving, optional)
  • Sliced green onions (for serving, optional)
  • Lime wedges (for serving, optional)

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with kosher salt and black pepper. Lightly dredge the skin side in flour, shaking off any excess.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and crushed red pepper flakes (if using). Set aside.
  3. Heat a large nonstick or stainless steel skillet over medium-high heat. Add 2-3 tablespoons of neutral oil and heat until shimmering but not smoking.
  4. Place the salmon fillets skin-side down in the hot pan. Press gently with a spatula for the first 20 seconds. Cook without moving for 4-5 minutes, until the skin is deeply golden and releases easily.
  5. Carefully flip the fillets and cook on the flesh side for 2-3 minutes, until mostly cooked through but still slightly translucent in the center. Remove the salmon to a plate and tent loosely with foil.
  6. Lower the heat to medium. Pour out any excess oil, leaving about 1 teaspoon in the pan. Add the glaze mixture and bring to a gentle simmer, stirring constantly. Cook for 2-3 minutes until thickened and glossy.
  7. Return the salmon to the skillet, skin side up, and spoon the glaze over the top for 1 minute. Flip and repeat, letting the glaze coat every surface.
  8. Transfer the salmon to plates, spooning any extra glaze from the pan on top. Garnish with sesame seeds, sliced green onions, and a squeeze of lime if desired. Serve immediately.

Notes

For best crispiness, pat the salmon very dry and don’t crowd the pan. Use rice flour or cornstarch and tamari for a gluten-free version. The glaze can be made ahead and stored in the fridge. Leftovers are delicious flaked over salads or in sandwiches, though the skin will lose its crispness after refrigeration.
