  • 1 tbsp vegetable oil or canola oil
  • 1/4 cup mayonnaise (60 ml)
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp pickle juice
  • 1/4 tsp garlic powder
  • 4 soft burger buns (preferably brioche or potato buns), lightly toasted
  • 4 thin slices sharp cheddar or American cheese
  • Fresh lettuce leaves
  • Thinly sliced tomato
  • Thinly sliced red onion (optional)
  • Pickle slices

Instructions

  1. Prepare the Secret Sauce (5 minutes): In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle juice, and garlic powder. Taste and adjust if needed. Cover and refrigerate.
  2. Preheat Your Skillet (5 minutes): Heat a cast-iron skillet over medium-high heat until slightly smoking. Add vegetable oil and swirl to coat.
  3. Form the Beef Balls (2 minutes): Divide ground beef into 4 equal portions and loosely roll each into a ball without overworking.
  4. Smash the Patties (10 minutes total): Place one beef ball in the hot skillet. Using a sturdy spatula, press down firmly to flatten into a thin patty about 1/4 inch thick. Hold pressure for 10-15 seconds. Season immediately with salt and pepper. Repeat for remaining patties, cooking 2 at a time if needed.
  5. Cook and Flip (3-4 minutes per side): Cook patties undisturbed until deep golden brown and edges are crisp (about 3 minutes). Flip gently, add a slice of cheese on top, and cook another 2 minutes until cheese melts.
  6. Toast the Buns (2 minutes): While patties cook, toast buns cut side down on another pan or toaster until golden and slightly crispy.
  7. Assemble the Burger (3 minutes): Spread secret sauce on both bun halves. Layer lettuce, tomato, and pickles on bottom bun. Place cheesy patty on top, add onion slices if using, and crown with top bun.
  8. Serve Immediately: Enjoy hot for best crispy edges and fresh sauce.

Notes

Do not press down on the burger after flipping to keep juices inside. Use a heavy skillet for best sear. Toast buns lightly to prevent sogginess. Secret sauce can be made ahead and refrigerated. Freeze uncooked beef balls for later use. Avoid flimsy spatulas for smashing.
