A simple and easy recipe for tangy, crunchy dill pickle spears made with fresh cucumbers, vinegar, and dill. Perfect for snacking and entertaining with a reliably crisp texture.

  • 4 medium-sized Kirby or Persian cucumbers, washed and cut into spears
  • 2 cups (480 ml) white vinegar (can substitute apple cider vinegar)
  • 2 cups (480 ml) water
  • 2 tablespoons pickling salt or kosher salt (preferably Diamond Crystal kosher salt)
  • 45 sprigs fresh dill, including flowers if possible
  • 3 garlic cloves, peeled and slightly crushed
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Wash the cucumbers thoroughly. Cut off the ends, then slice each cucumber lengthwise into 4-6 spears depending on size, keeping them uniform for even pickling.
  2. Place the cucumber spears in a large bowl and cover with cold water and ice cubes. Let soak for at least 30 minutes to lock in crispness.
  3. In a medium saucepan, combine 2 cups white vinegar, 2 cups water, and 2 tablespoons pickling salt. Heat gently, stirring occasionally until salt dissolves. Remove from heat and let cool slightly.
  4. Drain cucumbers from ice water and pat dry with a clean towel. Tightly pack spears vertically into clean glass jars. Add fresh dill sprigs, crushed garlic cloves, black peppercorns, mustard seeds, and red pepper flakes if using.
  5. Pour the warm brine over the cucumbers until fully submerged, leaving about half an inch of headspace. Seal jars tightly and refrigerate for at least 1 week before eating.

Notes

Soaking cucumbers in ice water before pickling is essential for crispness. Use pickling salt or kosher salt to avoid additives that cloud the brine. Refrigerate for at least one week for best flavor and crunch. Press down floating spears with a utensil or use weights to keep submerged. Adjust vinegar or water if brine tastes too sharp.
