These crispy grilled bacon-wrapped jalapeño poppers combine smoky, spicy, and creamy flavors for a perfect cookout appetizer that’s quick and easy to make.

  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 12 slices bacon, thin to medium thickness
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes carefully.
  2. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and pepper until smooth and well blended.
  3. Fill each jalapeño half with the cheese mixture, packing gently but firmly without overfilling.
  4. Wrap each stuffed jalapeño half with one slice of bacon, securing with a toothpick or skewer if needed.
  5. Preheat grill to medium-high heat (about 375°F). Lightly oil the grates to prevent sticking.
  6. Place bacon-wrapped jalapeños on the grill and cook for 7-10 minutes per side, turning carefully to crisp the bacon evenly and melt the cheese.
  7. Remove from grill and let rest for 5 minutes before serving.

Notes

If bacon chars too quickly, move poppers to indirect heat and close the grill lid to finish cooking. Remove toothpicks before serving. For milder heat, remove most seeds or substitute with milder peppers like poblano. Can be baked at 400°F for 20-25 minutes if no grill is available.
