Golden, crispy chicken with a garlicky Parmesan crust that’s easy to make and perfect for weeknight dinners or special occasions.

  • 24 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs
  • Olive oil spray
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. In a shallow bowl, whisk the eggs. In another bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, and parsley.
  3. Dip each chicken breast into the whisked eggs, ensuring it’s fully coated. Then, press it into the breadcrumb mixture, covering it completely.
  4. Place the coated chicken breasts onto a wire rack set on a baking sheet. Lightly spray with olive oil to help the coating crisp up.
  5. Preheat the oven to 400°F (200°C) and bake the chicken for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Alternatively, heat a skillet with 2-3 tablespoons of olive oil over medium heat. Cook the chicken for 4-5 minutes per side, until golden and crispy.
  7. Remove the chicken from the oven or skillet and let it rest for 5 minutes before serving.
