A quick and easy refrigerator pickle recipe that delivers crispy, garlicky, and dill-flavored pickles without the need for canning or deep frying. Perfect for snacking or entertaining with simple pantry ingredients.

Ingredients

Scale
  • 45 medium Kirby cucumbers
  • 45 garlic cloves, smashed
  • 45 fresh dill sprigs
  • 2 cups (480 ml) white distilled vinegar
  • 2 cups (480 ml) water
  • 2 tablespoons pickling salt or kosher salt
  • 1 tablespoon whole black peppercorns
  • 1 teaspoon mustard seeds (optional)
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Wash and slice the cucumbers into spears or rounds about ¼ to ½ inch thick (6-12 mm).
  2. In a mixing bowl, combine 2 cups white distilled vinegar, 2 cups water, and 2 tablespoons pickling salt. Stir until salt dissolves, about 2 minutes.
  3. Place smashed garlic cloves, dill sprigs, black peppercorns, mustard seeds, and red pepper flakes (if using) into the bottom of a clean quart-sized glass jar. Pack cucumber slices tightly on top, leaving about ½ inch headspace.
  4. Pour the prepared brine over the cucumbers, ensuring they are fully submerged. Press down to remove air bubbles and screw on the lid securely.
  5. Refrigerate the jar for at least 48 hours before tasting, ideally 3-5 days for maximum flavor and crispness. Keep refrigerated and consume within 3 weeks.

Notes

Use Kirby cucumbers for best crispness. Keep cucumbers fully submerged in brine to maintain texture. Refrigerate for at least 3 days for best flavor. Avoid warm brine to prevent soft pickles. Optional spices like mustard seeds and red pepper flakes add depth and heat. To re-crisp, soak pickles in ice water for 10-15 minutes before serving.
