  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons unsalted butter, melted
  • 34 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • White icing or melted white chocolate (optional, for laces)

Instructions

  1. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  2. Add the room temperature egg and vanilla extract. Beat on low speed until just combined.
  3. In a separate small bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and place on prepared baking sheets about 2 inches apart. Flatten each ball into an oval shape about 1/2 inch thick.
  8. Use a fork dipped in flour to press two sets of lines lengthwise into each cookie to create a football pattern.
  9. Bake for 10-12 minutes, until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the icing: Whisk together powdered sugar and cocoa powder. Add melted butter and 3 tablespoons milk, whisk until smooth. Add more milk if needed for drizzling consistency.
  11. Spread a thin layer of chocolate icing over each cooled cookie, leaving fork marks visible. Let set for 20 minutes.
  12. Optional: Pipe white icing or melted white chocolate down the center with two short crosswise lines for laces.

Notes

Chill the dough for at least 30 minutes to prevent spreading. Flour the fork between each cookie to keep lines clean. Cool cookies completely before icing. Store in an airtight container at room temperature for up to 5 days. Freeze un-iced cookies for up to 3 months.
