A quick and easy crispy flatbread made with cottage cheese and everything seasoning, perfect for a savory snack that’s crunchy on the outside and tender inside.

  • 1 cup (240 ml) cottage cheese, full-fat or low-fat, well-drained (small-curd preferred)
  • 1 cup (120 g) all-purpose flour (or gluten-free blend as substitute)
  • 1 teaspoon (5 g) baking powder
  • ½ teaspoon (2.5 g) salt
  • 1 tablespoon (15 ml) olive oil
  • 2 tablespoons (30 ml) everything seasoning (sesame seeds, poppy seeds, dried minced garlic, dried minced onion, coarse salt)
  • 23 tablespoons (3045 ml) water
  • Optional: pinch of smoked paprika or chili flakes
  • Optional: 1 tablespoon chopped fresh rosemary or thyme

Instructions

  1. Drain the cottage cheese in a fine-mesh strainer or cheesecloth for 10-15 minutes to remove excess moisture.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Add the drained cottage cheese and olive oil to the dry ingredients and stir gently to start forming the dough.
  4. Gradually add 2 to 3 tablespoons of water, mixing until a soft, slightly sticky dough forms. Adjust with more water or flour as needed.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat. If using a pizza stone, place it in the oven to preheat.
  6. Lightly flour your work surface and roll or press the dough into a roughly 9-inch (23 cm) circle or rectangle about ¼ inch (6 mm) thick.
  7. Brush the dough lightly with olive oil, then generously sprinkle everything seasoning evenly on top, pressing lightly to adhere.
  8. Transfer the flatbread to the baking sheet or preheated pizza stone and bake for 12-15 minutes until golden brown and crispy around the edges.
  9. Let the flatbread cool on a wire rack for 5 minutes to keep the bottom crisp.
  10. Cut into wedges or strips and serve warm or at room temperature.

Notes

Drain cottage cheese well to avoid soggy flatbread. Don’t overmix the dough to keep it tender. Press everything seasoning into the dough to prevent it from falling off during baking. Preheat baking surface for extra crispiness. Watch oven closely after 10 minutes to avoid burning. Cool on a rack to keep bottom crisp. Reheat in oven or toaster oven to restore crispiness.
