  • 1/2 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • About 3 cups (700ml) vegetable oil for frying (canola or sunflower)
  • 1 cup (170g) dark chocolate chips (semi-sweet or bittersweet)
  • 1/2 cup (120ml) heavy cream
  • Optional: pinch of salt and 1/4 teaspoon vanilla extract for chocolate sauce

Instructions

  1. In a medium bowl, whisk together flour, baking powder, salt, and 2 tablespoons sugar.
  2. In a small saucepan, bring water and melted butter just to a boil.
  3. Pour the hot butter-water mixture over the flour mixture. Add vanilla extract and stir quickly with a wooden spoon until a sticky dough forms. Let cool for about 5 minutes.
  4. Once dough is cool enough to handle, scoop about 1 tablespoon portions and roll each into a smooth ball, making approximately 20 to 24 bites.
  5. Pour oil into a deep pan to a depth of about 2-3 inches. Heat over medium-high heat to 350°F (175°C).
  6. Working in batches, carefully drop dough balls into hot oil. Fry for 3-4 minutes, turning occasionally until golden brown and crispy. Avoid overcrowding.
  7. Remove bites with a slotted spoon and drain on paper towels for a minute. While warm, roll each in cinnamon-sugar mixture to coat evenly.
  8. To prepare chocolate sauce, gently heat heavy cream until just simmering. Pour over chocolate chips in a heatproof bowl. Let sit 2 minutes, then stir until smooth. Add optional salt and vanilla extract.
  9. Arrange churro bites on a platter with warm chocolate sauce on the side. Serve immediately.

Maintain oil temperature at 350°F to avoid greasy or burnt bites. Roll dough balls evenly sized for consistent cooking. Coat bites in cinnamon sugar while warm for best adhesion.
