  • 1/2 cup all-purpose flour (or chickpea flour for gluten-free)
  • 2 large eggs, beaten (or flaxseed meal mixed with water for vegan)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon smoked paprika
  • A handful of parsley, finely chopped (optional)
  • Vegetable oil for frying

Instructions

  1. Shred the cabbage into thin ribbons using a grater or sharp knife. Place the shredded cabbage in a large mixing bowl.
  2. Add the chopped onion, minced garlic, and parsley to the cabbage. Mix well to combine.
  3. In a separate bowl, whisk together the eggs, flour, salt, black pepper, and smoked paprika until smooth. Add a splash of water if the batter seems too thick.
  4. Pour the batter over the cabbage mixture and stir until everything is evenly coated.
  5. Heat about 2 tablespoons of vegetable oil in a frying pan over medium heat. Spoon a small portion of the cabbage mixture into the pan and flatten slightly.
  6. Cook for 3-4 minutes on one side until golden brown and crispy. Flip and cook for another 3 minutes.
  7. Transfer the cooked fritters to a plate lined with paper towels to soak up excess oil. Repeat until all the batter is used, adding more oil to the pan as needed.
  8. Serve immediately while hot and crispy, with your favorite dipping sauce or a dollop of sour cream.
