Instructions

  1. Wash and dry your vegetables thoroughly. Chop them into bite-sized pieces about 1 to 1.5 inches (2.5 to 4 cm) for even cooking.
  2. In a large mixing bowl, combine the chopped vegetables with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat evenly.
  3. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  4. Place the seasoned vegetables in the air fryer basket in a single layer without overcrowding.
  5. Cook at 400°F (200°C) for 15 minutes, shaking the basket or tossing with tongs halfway through (around 7 minutes) for even browning.
  6. Check for doneness; vegetables should be golden brown and crispy on the edges while tender inside. Add 2-3 more minutes if needed.
  7. Transfer the veggies to a serving dish. Drizzle with fresh lemon juice and sprinkle with fresh herbs if desired. Serve immediately.
