This crispy air fryer gnocchi recipe delivers golden, crunchy gnocchi with a soft, fluffy center in under 20 minutes. It’s a quick, low-effort dinner or snack that’s endlessly customizable and perfect for busy weeknights.

Ingredients

Scale
  • 1 pound (16 oz) gnocchi (shelf-stable, refrigerated, or frozen)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 cup grated parmesan cheese (optional, for serving)
  • Fresh herbs (such as parsley, basil, or chives, optional, for serving)

Instructions

  1. Pour 1 pound of gnocchi into a large mixing bowl. If using frozen gnocchi, no need to thaw.
  2. Drizzle olive oil over the gnocchi. Sprinkle with salt, black pepper, and garlic powder (if using). Toss until all gnocchi are evenly coated.
  3. Preheat the air fryer to 400°F for 2 minutes (optional, but helps with even crisping).
  4. Arrange the gnocchi in a single layer in the air fryer basket. Avoid crowding; cook in batches if necessary.
  5. Air fry at 400°F for 11-13 minutes, shaking the basket halfway through. Cook until golden brown and crispy on the outside, fluffy on the inside. For extra crunch, cook 1-2 minutes longer, watching closely.
  6. Check for doneness: gnocchi should be crisp and slightly puffed. If still pale, cook in 2-minute bursts, shaking in between.
  7. Transfer gnocchi to a serving bowl. Sprinkle with parmesan cheese and fresh herbs, if desired. Serve immediately.

Notes

For gluten-free, use gluten-free gnocchi. For dairy-free or vegan, skip the parmesan or use a vegan cheese. Do not overcrowd the air fryer basket—cook in batches for best results. Shake or flip gnocchi halfway through cooking for even crispiness. Serve immediately for maximum crunch. Leftovers can be reheated in the air fryer at 350°F for 3-4 minutes.
