A quick and healthy recipe for crispy fish fillets made in the air fryer, delivering a golden crust and tender flaky fish without the greasy mess of traditional frying.

  • 4 fish fillets (about 1 lb / 450 g) of white fish like cod, tilapia, haddock, or pollock (fresh or thawed if frozen)
  • 1 cup (about 100 g) panko breadcrumbs (gluten-free panko optional)
  • ½ cup (60 g) all-purpose flour (almond flour for low-carb version)
  • 2 large eggs, beaten
  • ¼ cup (25 g) finely grated Parmesan cheese (optional, can substitute nutritional yeast for dairy-free)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt (adjust to taste)
  • ¼ tsp freshly ground black pepper
  • Pinch of cayenne pepper (optional)
  • Cooking spray or olive oil for misting

Instructions

  1. Pat the fish fillets dry with paper towels to remove excess moisture. Season both sides lightly with salt and pepper.
  2. In one shallow bowl, whisk 2 large eggs until well combined. In another bowl, mix together panko breadcrumbs, all-purpose flour, grated Parmesan, garlic powder, smoked paprika, onion powder, salt, and black pepper.
  3. Dip each fish fillet first into the egg mixture, coating fully. Then press firmly into the breadcrumb mixture, coating all sides well. For extra crunch, repeat the egg and breadcrumb dip once more. Place coated fillets on a plate or tray.
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Lightly spray both sides of each coated fillet with cooking spray or brush with olive oil. Place fillets in the air fryer basket in a single layer without overlapping.
  6. Air fry at 400°F (200°C) for 10 to 12 minutes, flipping halfway through. Fillets should be golden brown and crisp, and fish should flake easily and reach an internal temperature of 145°F (63°C). Adjust time for thickness as needed.
  7. Let the fillets rest for 1-2 minutes after cooking before serving.

Pat fish dry before breading for best crispiness. Preheat air fryer to ensure a crunchy crust. Lightly spray oil to avoid dryness. Flip fillets halfway through cooking for even browning. Adjust cooking time based on fillet thickness. For dairy-free, omit Parmesan or substitute with nutritional yeast. For gluten-free, use gluten-free panko and almond flour. Reheat leftovers in air fryer at 350°F for 3-4 minutes to maintain crispiness; avoid microwaving.
