A quick and easy recipe for homemade crispy egg rolls using an air fryer, delivering a healthier alternative to traditional deep-fried snacks with a perfect crunch in about 20 minutes.

  • Egg roll wrappers (square, about 6.5 inches)
  • Vegetable oil or cooking spray
  • 1/2 pound ground pork or chicken (225 grams)
  • 2 cups finely shredded green cabbage (about 150 grams)
  • 1 cup grated or julienned carrots (about 120 grams)
  • 34 stalks green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 2 tablespoons soy sauce (preferably low-sodium)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional add-ins: bean sprouts, mushrooms, water chestnuts

Instructions

  1. Prepare the filling: Heat 1 tablespoon vegetable oil in a non-stick skillet over medium-high heat. Add ground pork or chicken and cook, breaking up with a spatula, until no longer pink, about 5 minutes. Drain excess fat if needed.
  2. Add aromatics and veggies: Stir in minced garlic and grated ginger, cooking for 30 seconds until fragrant. Add shredded cabbage, grated carrots, and sliced green onions. Cook, stirring often, for 3-4 minutes until veggies soften but remain slightly crisp.
  3. Season the filling: Pour in soy sauce and sesame oil. Add salt and pepper to taste. Stir well and cook for another minute. Remove from heat and let cool slightly.
  4. Roll the egg rolls: Lay one egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape). Place about 2 tablespoons of filling near the corner closest to you. Fold the corner over the filling, then fold in the sides snugly. Roll tightly toward the opposite corner, sealing the edge with a dab of water or beaten egg. Repeat with remaining wrappers and filling.
  5. Prepare for air frying: Lightly brush or spray each egg roll with vegetable oil on all sides.
  6. Air fry the egg rolls: Preheat air fryer to 400°F (200°C) if required. Place egg rolls in a single layer in the basket with space between each. Cook for 7 minutes, flip, then cook an additional 3 minutes or until golden brown and crispy. Adjust timing as needed.
  7. Serve warm: Let egg rolls cool for a minute or two, then enjoy with your favorite dipping sauce.

Notes

Keep filling well-drained and slightly cooled before rolling to prevent soggy wrappers. Lightly oil egg rolls before air frying for a golden crisp. Flip halfway through cooking for even crispiness. Do not overfill wrappers to avoid bursting. Can freeze uncooked egg rolls on a tray before storing in freezer bags.
