  • 1 teaspoon paprika
  • 1 tablespoon olive oil or avocado oil
  • ½ cup mayonnaise
  • ¼ cup buttermilk
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • ½ teaspoon garlic powder (for ranch dip)
  • ¼ teaspoon onion powder (for ranch dip)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste (for ranch dip)

Instructions

  1. Rinse and pat dry 2 pounds (900g) of chicken wings with paper towels. Split the wings into flats and drumettes if not already done. (About 10 minutes)
  2. In a large bowl, combine 1 tablespoon baking powder, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, ½ teaspoon onion powder, and 1 teaspoon paprika.
  3. Toss the wings in 1 tablespoon olive or avocado oil, then sprinkle the seasoning mixture over them. Use your hands or tongs to evenly coat the wings, making sure the baking powder touches the skin everywhere. (5 minutes)
  4. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  5. Arrange wings in a single layer in the air fryer basket without overcrowding. Cook for 10 minutes at 400°F (200°C). Flip wings over with tongs, then cook for another 8-10 minutes or until golden brown and crispy. The internal temperature should reach 165°F (74°C). (Total cook time per batch: 18-20 minutes)
  6. While wings cook, combine ½ cup mayonnaise, ¼ cup buttermilk, 1 tablespoon each chopped parsley, dill, and chives, ½ teaspoon garlic powder, ¼ teaspoon onion powder, 1 teaspoon lemon juice, and salt and pepper to taste in a small bowl. Whisk until smooth and refrigerate until ready to serve. (5 minutes)
  7. Once wings are crispy and cooked through, transfer to a serving plate. Serve immediately with the chilled ranch dip on the side.

Pat wings very dry before seasoning to ensure crispiness. Use baking powder, not baking soda, to dry out the skin and promote browning.
