This recipe delivers crispy, juicy chicken thighs cooked quickly in an air fryer with a rich garlic herb butter that caramelizes beautifully for a flavorful, comforting meal.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (medium-sized)
  • 3 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • Zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Garlic Herb Butter: In a mixing bowl, combine 3 tablespoons of softened unsalted butter with minced garlic, chopped parsley, thyme, rosemary, lemon zest, salt, and pepper. Mix well until evenly distributed.
  2. Season the Chicken Thighs: Pat the chicken thighs dry with paper towels. Rub each thigh lightly with olive oil, then season both sides with salt and pepper.
  3. Apply the Garlic Herb Butter: Spread about a tablespoon of the garlic herb butter under the skin of each chicken thigh by gently loosening the skin without tearing it.
  4. Preheat the Air Fryer: Set the air fryer to 400°F and preheat for 3 minutes.
  5. Air Fry the Chicken: Place the thighs skin-side down in the air fryer basket without overcrowding. Cook for 9-10 minutes, then flip to skin-side up and cook for another 9-10 minutes until the internal temperature reaches 165°F and the skin is golden and crispy.
  6. Rest and Serve: Let the chicken rest for 5 minutes after cooking to lock in juices and allow the garlic herb butter to settle.

Notes

Pat chicken skin dry thoroughly for best crispiness. Avoid overcrowding the air fryer basket to ensure even cooking and crisp skin. Spread garlic herb butter under the skin, not on top, to prevent sogginess. Preheat the air fryer for immediate crisping. If skin is not crispy enough, finish with 2-3 minutes under the broiler watching carefully. Leftovers keep well refrigerated for 3 days and reheat best in the air fryer at 350°F for 5 minutes.
