  • 2 tablespoons olive oil (for chicken marinade)

  • 1 teaspoon lemon zest (optional)
  • 1 large head Romaine lettuce, washed and chopped
  • 1/2 cup homemade croutons
  • 1/4 cup freshly grated Parmesan cheese (plus extra for garnish)
  • 1 large egg yolk (room temperature)
  • 2 anchovy fillets, finely chopped
  • 1 small garlic clove, minced
  • 2 teaspoons Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice (about half a lemon)
  • 1/2 cup olive oil (extra virgin for dressing)
  • Salt and black pepper, to taste

Instructions

  1. Marinate the chicken: In a small bowl, mix olive oil, garlic powder, lemon zest, salt, and pepper. Rub all over chicken breasts. Let sit at least 15 minutes at room temperature.
  2. Prepare the dressing: In a medium bowl, whisk egg yolk, chopped anchovies, minced garlic, Dijon mustard, and lemon juice until smooth. Slowly drizzle in olive oil while whisking to emulsify. Stir in Parmesan cheese. Season with salt and pepper.
  3. Heat grill or grill pan to medium-high (about 400°F). Grill chicken 5-6 minutes per side until cooked through (internal temp 165°F). Let rest 5 minutes, then slice thinly against the grain.
  4. Chop Romaine into bite-sized pieces and pat dry with paper towels.
  5. In a large bowl, combine Romaine, sliced chicken, and croutons. Drizzle with dressing and toss gently to coat.
  6. Serve salad plated with extra Parmesan sprinkled on top and a squeeze of fresh lemon.
