  • 1 teaspoon chili powder (or smoked paprika)
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for roasting the corn)

Instructions

  1. Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until charred spots appear, about 7-8 minutes.
  2. In a mixing bowl, combine mayonnaise, sour cream, minced garlic, lime juice, chili powder, salt, and pepper. Stir until smooth. Optionally, pulse with an immersion blender for a smoother texture.
  3. Add the roasted corn to the creamy base and mix gently. Fold in crumbled cotija cheese and chopped cilantro if using. Taste and adjust seasoning as needed.
  4. Serve immediately warm or refrigerate for 30 minutes to let flavors meld. If chilled, bring to room temperature before serving.
