  • 1 tbsp espresso or strong brewed coffee (15ml) – decaf optional
  • 1 tbsp maple syrup or honey (15ml)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mixing bowl or jar, add rolled oats, ground cinnamon, ground ginger, ground nutmeg, and a pinch of salt. Stir gently to blend the spices evenly throughout the oats (about 1 minute).
  2. Add the wet ingredients: Mix in pumpkin puree, milk of choice, Greek yogurt, maple syrup or honey, espresso or strong brewed coffee, and vanilla extract. Whisk or stir vigorously until smooth and well combined (about 2 minutes).
  3. Seal and refrigerate: Cover the jar or bowl tightly with a lid or plastic wrap. Place in the refrigerator for at least 6 hours or overnight to allow oats to soak and flavors to meld.
  4. Serve and garnish: In the morning, check consistency and stir in a splash more milk if too thick. Top with optional chopped pecans, pumpkin seeds, or extra maple syrup if desired (about 2 minutes).

Notes

Use old-fashioned rolled oats for best texture; instant oats get mushy. Espresso or coffee adds subtle depth but can be omitted or replaced with decaf. Greek yogurt adds creaminess and protein; substitute with coconut yogurt for dairy-free. Sweeten to taste with maple syrup or honey. Let oats chill at least 6 hours or overnight for best texture.
